Beer Battered Fish & Chips
Ingredients
The Fish
2 large fresh tilapia fillets
1 qt. canola oil
1 1/2 cups all purpose flour, divided
1 1/4 cups beer
1 tsp. black pepper
1/4 tsp. sea salt
1 tsp. paprika
malt vinegar (optional)
The Chips
2 large baking potatoes
2 tbsp. olive oil
1 tbsp. paprika
1 tbsp. chili powder
ketchup (optional)
Preparation and Cooking Instructions
Preheat oven to 400°F (204°C).
Cut potatoes into wedges.
Combine olive oil, paprika, and chili powder in a bowl.
Coat the potatoes with the mixture and place on a baking sheet.
Bake for 30 minutes, turning them over about 15 minutes in.
For the fish, pour the canola oil into a deep pan or pot so that it is 2 inches deep.
Place over medium heat.
In a bowl add 1 cup of the flour and the beer, salt, pepper, and paprika.
Whisk until smooth.
Cut the fresh tilapia into strips and pat dry.
Place the remaining flour onto a shallow plate.
Once the oil has reached 375°F (191°C), roll each piece of fish into the flour and shake off the excess.
Dip the fish into the batter and let the excess drip back into the bowl.
Gently place the fish into the hot oil and cook for about 2-3 minutes per side or until golden brown.
Take the fish from the oil and place on paper towels to drain.
Keep the fish warm in the oven while you fry the remaining fish.
Serve with the fries and malt vinegar and ketchup on the side if desired.
