Tilapia Po'Boy

Ingredients

Po'Boy Sandwich

  • 1 fresh tilapia fillet
  • 1 focaccia bread (or bread of your choice)
  • 1 sliced vidalia onion
  • chicory lettuce leaves
  • canola oil (for frying)

Remoulade

  • 2 tbsp. cornichons, diced
  • 1/2 cup mayonnaise
  • 1 tbsp. capers, chopped
  • 1 lemon, zested
  • 1 lemon, juiced
  • 1 tsp. hot paprika
  • 1 tsp. dijon mustard
  • 1 tsp. tarragon, chopped
  • 1 tsp. parsley, chopped
  • salt to taste

Salad

  • 1/2 bunch watercress
  • 3-4 small radishes
  • 1-2 tbsp. extra virgin olive oil
  • 1/2 lemon, juiced
  • salt & pepper to taste

Tempura Batter

  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 - 3/4 cup cold seltzer water
  • 6 ice cubes

Preparation and Cooking Instructions

Remoulade

  • Combine mayonnaise, tarragon, lemon juice, dijon mustard, hot paprika, parsley, cornichons, capers, and salt into a small mixing bowl.
  • Stir well.

Tilapia Sandwich

  • Season the fillet with salt.
  • For the tempura batter, mix the all-purpose flour, cornstarch, and a pinch of salt in a bowl.
  • Add seltzer water and ice, then mix.
  • Dip the fillets in the batter and carefully drop the fish in a pot of heated oil.
  • Cook 4-5 minutes.
  • Cut the focaccia roll in half and evenly spread the remoulade on each side.
  • Add vegetables of your choice and the tilapia fillet.

Watercress Salad

  • Combine watercress and radishes in a bowl and dress with salt, black pepper, extra virgin olive oil, and lemon juice.
  • Toss.
